Cranberry Almond Biscotti






Cranberry Almond Biscotti
note you need a really big cookie sheet/sheet pan

* 1 cup Sliced Almonds
* 1/2 cup dried Cranberries(I used Craisins)
* 3 cups Ap Flour
* 3 Eggs
* 1 1/2 cup Sugar
* 1/4 tsp Salt
* 1 tsp Baking Soda
* 1 tbls Vanilla Extract

Mix the wet and dry separately, then mix them together(wet onto dry). Add and mix in the cranberries and almonds. Roll the dough out(I think it helps distribute the cranberries and almonds) then divide in thirds. Shape each third into a loaf about how long you want the finished cookies. Place loaves on greased cookie/sheet pan and sprinkle with some sugar. Bake at 400f for 30 minutes. Let cool then cut into 1inch strips. Bake again for 15 minutes
